Similar to black-eyed peas, these peas are staples of true Southern cooking and complement corn bread, ham, and okra. Try cooking them on the stove or in a slow cooker using these basic methods.

On the Stove

One of the simplest ways to cook fresh purple hull peas is to let them simmer on the stove. All you need is a single pot and a few spices. Then, take the basic method and include some bacon and rice for a delicious and filling side dish.

  1. Rinse off the peas.
  2. Shell them by peeling open the outer shell and removing the peas inside.
  3. Place peas in a pot with enough water to cover them.
  4. Sprinkle with garlic powder, salt, and pepper for flavor.
  5. Bring to a boil, then cover and simmer for about two hours stirring the peas occasionally.
  6. Cook until the peas are tender but not broken.
  7. Drain the water and serve with ham, pork, or on rice.
